Sweet Potato “Tacos”

Perfect or #tacotuesday without ruining your diet! These were a huge hit on my instagram so I figured I would share the recipe.

If you have not ordered your Insta Pot yet, you need to now, It is life changing. Saves so much time, mess and is user friendly. I use this one (pictured below) and I love it.

So This recipe is super easy and you can use your favorite toppings. I will share with you the avocado sauce we put on top that was to die for.



  • 4 sweet potatoes

  • 1 lb ground beef or the salsa chicken from the insta pot I posted about!

  • Favorite taco toppings

Avocado-Jalapeño “crema”:

  • 1 avocado

  • 1 Jalapeño

  • 3/4 cup fresh cilantro leaves

  • 1/2 cup water

  • 3 cloves garlic

  • 2 tsp white vinegar

  • salt and pepper


  1. Cook sweet potatoes in insta pot. I did 27 mins, 5 mins natural release, 5 mins forced release.

  2. Cook ground beef, add your favorite taco seasonings

  3. add all ingredients for the avocado jalapeño “crema” into a food processor or I used a hand immersion blender with Marlie

  4. cut sweet potato in half and stuff it with favorite toppings and finish it off with the crema and some fresh cilantro

you maybe thinking … who puts broccoli on a taco? hah well we did and it was delicious. Marlie loved her deconstructed version of her “orange potato” taco .
