Easy Chicken Enchiladas

So, you are strapped for time and do not feel like cooking really anything. This is the perfect quick and easy recipe that is also easy and fun to include the kiddos.

This is one of our go to “I don’t feel like cooking” recipes and it is not 100% clean but is still a great option.

These are my simple enchiladas that can be adapted to your eating preference or allergy.

Honestly, we just serve it as a “casserole”, but you can serve it as enchiladas too! I am just too lazy and cut it however I want.


Ingredients

1 pack of siete brand tortillas (I use almond flour ones)

1 can of your favorite enchilada sauce (I used Hatch — see my top 4 sauce at the bottom)

1 chopped onion

1 cup shredded cheese

1 TBS avocado oil to grease pan and i put a little on tortillas

1 rotisserie chicken (shredded)

1 square baking dish 9x9


Directions:

  1. Preheat oven to 425

  2. grease the baking dish with avocado oil leaving some to oil the tortillas (makes them easier to roll and not break)

  3. fill tortilla with chicken (about 1/3 cup), sprinkle of onion and cheese.

  4. roll it up and set into the dish all the way to one side

  5. repeat this for all of the tortillas and fillings and fit them in however you can!

  6. open the canned sauce and dump it over all of your rolled enchiladas and cover them as evenly as possible

  7. sprinkle with a little more cheese

  8. bake for 20 minutes or until sauce is bubbling and cheese is browned

  9. Serve with spatula and enjoy

** I top ours with cilantro chili bitchin sauce instead of sour cream! can add fresh cilantro too!

**We served it with brown rice/quinoa and black beans
