1 pound Brussels sprouts trimmed and shredded
4 tablespoons spicy olive oil (can do regular)
Fresh ground black pepper & Salt to taste
1 lb lean ground beef
giant handful of power greens
1 tablespoon of minced garlic
Box of favorite GF pasta (8oz) My favorite for this dish. Ancient Harvest Organic Gluten-Free Corn and Quinoa Supergrain Pasta Shells, 8 oz. Box, Plant-Based Pasta with the Same Great Taste and Texture of Traditional Pasta
1 cup grated Parmesan cheese (if you do dairy this is delish)
Trim the ends from the brussels sprouts then shred them. I use my Ninja Professional 72oz Countertop Blender with 1000-Watt Base and Total Crushing Technology for Smoothies, Ice and Frozen Fruit (BL610), Black .Toss into skillet with some olive oil and the garlic. cook for about 10 minutes until tender.
While these are cooking. Cook your ground beef in a separate pan (add in power greens here to mix in and cook down with meat), until browned.
Cook pasta as per instructions on the box and set aside.
Add the beef and pasta to the skillet with the brussels sprouts. add salt and pepper and heat again to combine while adding in remaining olive oil.
Serve warm or even cool!
