No Bake Almond Butter Energy Bites

These are my favorite and are so easy to make. These are an easy healthy dessert or quick breakfast! You can switch out chocolate for cranberries or flax for the coconut. Very versatile and delicious.


  • 1/2 cup dark chocolate chips (I use enjoylife)

  • 1 cup GF old fashioned oats

  • 1/2 cup shredded unsweetened coconut

  • 1 tablespoon chia seeds

  • 2/3 cup almond butter (can use peanut butter)

  • 1/2 cup Honey


  1. In a large bowl, stir together almond butter and honey and microwave for 10 seconds (not necessary I just like my chocolate to be a hint melty)

  2. Mix in oats, chia and flax and stir well until combined

  3. Mix in Chocolate chips and combine

  4. Roll into circles (about 10-12) (honestly sometimes I just eat it with a spoon out of the bowl haha

  5. Store in the fridge. (if you do not eat it all haha)
